I’m Emily V., a mom of two living in Canada—and I’m so glad you’re here.
Plate Me Happy was born out of love, necessity, and a little bit of chaos in the kitchen.
Years ago, my mom began developing food allergies that dramatically limited her diet. Shortly after, my dad was diagnosed with diabetes and had to begin monitoring not only what he ate, but when he ate it. Suddenly, every meal became a balancing act—finding food that was safe, nourishing, and still something we could all look forward to.
Then came the arrival of my two little ones—my bundle of joys who also happened to be picky eaters. And as life would have it, I developed multiple allergies of my own after giving birth. Mealtimes became even more challenging—but they also became an opportunity.
I found myself searching for recipes that could accommodate different dietary needs without sacrificing joy, taste, or variety. Unfortunately, those recipes were hard to find. So, I started creating them myself—testing, tweaking, and improving them over the years.
Plate Me Happy is the result of that journey.
This site is a place where you’ll find real food for real families—recipes that aim to be allergy-friendly, diabetes-conscious, kid-approved, and, most importantly, delicious. Whether you’re cooking for someone with dietary restrictions or just looking to bring more variety and balance into your kitchen, I hope you’ll find something here that inspires you.
If you love a recipe or meal plan you find here, I’d be so grateful if you shared it with your friends and family. Your support means the world—and it helps me continue offering these resources for free to anyone who needs them.
Thank you for being here.
With love and happy plates,
Emily V.
