Garlic Herb Salmon Sheet Pan Dinner with Roasted Sweet Potatoes & Zucchini
A complete dinner on one pan. Salmon fillets roasted alongside sweet potatoes, zucchini, and bell peppers, all seasoned with garlic, olive oil, and herbs. Simple, colorful, and perfect for a no-fuss weeknight meal.

- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with half the olive oil, garlic, herbs, salt, and pepper. Spread on sheet pan. Roast 10 minutes.
- Toss zucchini and bell peppers with remaining olive oil, garlic, herbs, salt, and pepper. Add to sheet pan with sweet potatoes.
- Push vegetables aside, place salmon in the center, and season with salt, pepper, and extra herbs.
- Roast another 12–15 minutes until salmon is cooked through and vegetables are tender. Serve hot.
Notes
- Swap sweet potatoes for baby potatoes if preferred.
- Add a squeeze of lemon before serving for brightness.
